Often cited as Vancouver's most sophisticated and understated restauranteur, John Bishop grew up Wales, attended hotel school, worked in restaurants in Ireland and England, moved to Vancouver in 1972, worked in several restaurants and opened Bishop's in 1985. Indicative of his style, his first cookbook was called Bishop's: The Cookbook. Bishop co-authored Cooking at My House and Simply Bishop's: Easy Seasonal Recipes (Douglas & McIntyre, 2002, 2008) with Dennis Green who joined Bishop's in 1993 and became chef there in 1997. These were followed by John Bishop's Fresh (D&M 2007).
