Natham Hyam, a frequent traveller to Asia, studied Thai cuisine in Bangkok at the Oriental Hotel cooking school, the Suan Dusit college and Wandee Culinary Academy. He worked as a chef and a chef-instructor in B.C. until February of 2004 when he moved to run "The Cooks Class" cooking school on Grand Cayman Island.
